The team behind the Stafford Lakes ‘Lunch in the Lakes’ events is celebrating a milestone this month, serving lunch for its 100th event.
The team are all residents at Stafford Lakes Retirement Community. They came together in 2016 as a crew of five:
- Helen Nelson
- Erica Ganko
- Shirley Morrow
- Gary Wanless
- Ian Read.
The ‘Lunch in the Lakes Restaurant Team’, as they became known, made lunch for 16 residents in August 2016, and then made lunches for 28 people every month soon after that. The dedicated group do all the purchasing, preparing and cooking of the delicious meals and, in 2017, four of the team completed ‘Rational Chef Training’, so they could use the commercial kitchen and oven.
By 2018, the team was confident enough to expand the numbers they could serve and, since then, they have prepared an average of 46 meals for each event (except Christmas, which gets up to 55 happy customers). They even offer their tasty meals as takeaway for those that request it.
The Stafford Lakes “Lunch in the Lakes Restaurant Team” has now grown to be a team of 11, and they celebrated their 100th event on Friday 15th December with an ‘almost traditional Christmas feast’, including honey and marmalade-glazed triple-smoked ham, butter-glazed turkey breast, baked veggies, and a special ‘Christmas/100″ dessert.
The Lunch in the Lakes team were kind enough to share some of their favourite recipes with us so we can all join in the delicious fun.
